Susu Produk, yaitu produk susu, termasuk dalam kelompok besar makanan. Sebagian besar makanan fungsional saat ini dibuat dari produk susu. Susu merupakan makanan pokok yang biasanya diperoleh dari pemerahan sapi atau hewan lain, seperti domba dan kambing. Walaupun ada tren yang meningkat untuk mengkonsumsi apa yang dianggap susu dari oat, almond atau kedelai. Susu terdiri dari air, karbohidrat, protein, lemak, mineral dan vitamin, karena kasein protein utama dalam susu dan laktosa adalah gula dalam susu. Nutrisi yang terkandung di dalam susu ada dalam suspensi, larutan atau emulsi.

Industri susu umumnya menerapkan serangkaian teknik untuk elaborasi produk: termisasi, penyaringan, homogenisasi, fermentasi, pasteurisasi dan mengental. Pasteurisasi dapat ditekankan. Ini adalah perlakuan termal untuk susu dengan suhu tertentu selama periode waktu tertentu. Ini menghancurkan patogen dan meningkatkan kualitas. Proses lain, pengentalan, yang dicapai melalui proses flokulasi fisikokimia, skimming dan penggabungan, diterapkan pada pemrosesan keju.

Ada banyak produk susu, contohnya yogurt, es krim dan keju. Karena adanya permintaan tersebut, industri susu saat ini memfokuskan pada proses produksinya mengingat bahan bakunya sangat mudah rusak. Selama pemrosesan, persyaratan hukum harus dipenuhi untuk mendapatkan produk yang layak dikonsumsi manusia. Untuk itu dilakukan analisis sensoris, fisik, kimiawi dan bakteriologis. Secara alami, produk susu harus memiliki kualitas dan bau yang khas, warna dan rasa yang membuat makanan menarik.
